Why doesn't the 5th Amendment give people the right to refuse to show a driver's license?

You can refuse to show the license. If you don't have one you really don't have any other choice, but that doesn't mean you aren't guilty of driving without a license. Your refusal to show your paperwork is evidence that you don't have it. If you don't want to face legal consequences for that, you have to produce it.
